► Polynesian Chicken (2 dinners, pictured above) - We also doubled this meal to freeze (for 2 more dinners). I actually cooked the two batches separately because this one is nearly overflowing in the pan, but it cooks so quick it was no problem. We poured it into a freezer bag (spread out flat in the freezer) and will make fresh rice the night we re-warm it.
► Lemon-pepper salmon with pan fried Asparagus & (instant) wild rice mix - 'Oily' fish is so good for the baby in the 3rd trimester!
► Grilled hamburgers with (frozen) steak fries & green peas (2 dinners)
