Pretzel Coated Chicken with Vegetable Cous Cous

Here is an old favorite that we made recently after a long hiatus. I often avoid anything that requires breading, but it's really not that much work! You can find the recipe here.

Pretzel Coated Chicken with Cous Cous

The chicken is breaded in a fun mixture of crushed pretzels & peanuts with a dash of red pepper flakes. Instead of peppers & onions we toss the cous cous with your normal veggie mix (carrots, peas, carrots, & green beans). I'm not a mustard fan, so we've never tried the sauce, but the chicken is so flavorful on its own you don't need it.

The three year old declared the cous cous 'like rice' and gobbled it up without a fight. At one point he asked why there were veggies mixed in. Justin and I both blurted out, "To make it yummy!", worried that he would he would stop eating it. Orson took another bite and thought for a minute, then said, "And to make it healthy." Touche, toddler!
